CRESCENT MOON is an ensamble of two different wild agave species - Tobala and Cuishe - and is ideal for drinking pure. The agave distillate is made by Nelson García Sernas and his family in their traditional palenque in Santiago Matatlán in the central valleys of Oaxaca. Agave hearts of both species are cooked together in an earth oven, crushed and then naturally fermented in pinewood barrels.
The ensamble is then double distilled in a large copper still.

Taste profile: Nose: Fresh roasted asparagus and agave, light citrus, tarragon,
eucalyptus and under-ripe pear. Faint aromas of white flowers and blossom.
Palette: An immense, mouth-filling breadth of flavor, eucalyptus follows through,
light orchard fruit notes- apple, pear, quince, subtle and well integrated smokiness,
exceptionally long, lingering finish that carries all of the flavors.
